I love chowders, and this one is quick and easy to make. Salmon is one of the best fish sources of anti-inflammatory omega-3 fat, an essential fat that supports heart health. The added bonus? Kids love it, too!
4 Tbl coconut oil
1 large onion, sliced
3 large carrots, diced
3 celery stalks, diced
1 cup kale, torn or chopped
4 new potatoes, cut into quarters
2 cups coconut milk
1 cup chicken broth
1 bay leaf
1 lb wild salmon fillets
salt and pepper, to taste
handful of parsley
1. Place a large pot over medium heat, and add 2 tablespoons oil. Add the onion, carrots, celery, kale and potatoes. Sauté for 8 minutes.
2. Add the coconut milk, broth, and bay leaf. Bring to a simmer and continue to cook.
3. In a large frying pan, add the remaining 2 tablespoons of oil and cook the salmon, skin side down, until crisp and brown. Flip and cook the other side for about 2 minutes. Remove and discard the skin. Chop the salmon and add it to the pot.
4. Make sure the potatoes are tender before serving. Add salt and pepper to taste.
5. Serve in bowls garnished with parsley
